Wish those crabs came sooner

Today was interesting because I was entrusted with putting out all of the parties by myself.   It was only 2 small parties but it was the first time I was running the show.  Chef Ben was around, but he was in a meeting most of the time.  Everything went off without a hitch too.  The crabs were the biggest pain.  The guy delivering them didn't show up until an hour before the party.  The client said they wanted them split which would have been easy if it were whole crabs.  Instead they were all crab legs which is a lot more tedious to split open.  The favor on them turned out great.  I boiled them in water I seasoned with salt and some bay leaves.  The bay leaf came through nicely.  I also deglazed all of the pans for the demi which was fun.  I like making demi, but I have never really like the flavor.  Even correctly made demi doesn't appeal to me.  Also had to do a random salmon platter.  It is fun making stuff up on the spot though.
