Worked in the cafe today

I had to cover a cafe shift today.  Cafe isn't as interesting visually because we don't really get to plate anything crazy.  We get lots of compliments for our cafe food though.  A lot of the employees work at other hotels and they say our food is by far the best.  So it is reassuring that even though it may not look like the best food at least it tastes good.  We did a taco day and about the only thing I found visual interesting was seasoning the beef.  Pastries was doing some cool stuff and I got some good pictures from the rest of the kitchen.
Season beef for tacos

Mini lemon meringue

Rocky road chewy bar

Crab cakes

This is how we cool and store our 80 gallons of demi

Seared sea bass

Butternut ravi

Mini quiches

Fried chicken for the hawks

Mini bacon wrapped scallops

These quiches didn't really work out.  Some of the shells had holes and leaked eggs everywhere.

Corned beef, yum!

Rosemary demi

Apricot chili glaze

French onion soup carmalizin them onions

Red pepper coolie.  Thats what we use to blend most things

Onion soup with wine reducing and some bay leafs

Mac and cheese bites

Gotta use proper cooling methods
